12 minute Creamy Pea and Potato Soup

One ingredient I always make sure I have at home in the freezer, are frozen peas. I manage to cook with them every second day…when needing accompaniments to roasts, adding them to creamy bacon pastas, or in this case the ever so Quick and Easy Green pea and potato soup.

This is one of my favourites and it honestly took me 12 minutes to cook up this deliciously, bright green bowl of scrumptiousness last night.

All you need to do is Sauté 1 chopped onion, 2 cloves of garlic, 1 peeled and chopped potato and 2 rashers of chopped bacon in a little olive oil for a few minutes. Add about 2 cups of vegetable stock, cover and simmer for 5 minutes.

Once potatoes of soft add 1 cup of frozen peas, cover lid again and cook for a further 5 minutes. Once peas are soft, remove pot from heat, add 2 tablespoons of cream, season with salt and pepper and blend until smooth.

And that’s it!

Soup in 12 minutes! Trust me…this one will most likely make a weekly appearance, it’s that good and so quick and easy to make!
