Something for the long weekend!
4-6 large juicy ripe plums, halved and de-pitted
½ cup (125ml) flour
50g butter, chilled and cubed
3 Tbsp (45ml) brown sugar
¼ cup (60ml) oats
4 ginger biscuits, crushed finely
¼ cup (60ml) Orange liqueur, to serve (optional)
Vanilla bean ice cream, to serve
Preheat oven to 180°C.
Place halved plums, flat side up, onto a baking tray and set aside.
Place flour, sugar and oats into a bowl and using your fingers, rub in butter until mixture resembles breadcrumbs.
Top each halved plum with a little of the crumble mixture and sprinkle generously with some crushed ginger biscuits.
Bake in oven for about 15-20 minutes or until plums have softened and crumble is crispy and golden.
Serve warm, with a little orange liqueur drizzled over the plums and a serving of vanilla bean ice-cream.
