I admit that this recipe takes a little time to make (like 4 hours) but honestly there is nothing better than homemade chicken soup. So if you are feeling a little adventurous and have some time to kill, give this delicious Homemade chicken soup recipe a go.
The great thing about this recipe is that you will have enough chicken left over to make a whole separate meal too (Im thinking something along the lines of Chicken, leek and wild mushroom pie – will post a recipe for this tomorrow).

HOMEMADE CHICKEN SOUP
For the chicken stock
1 whole chicken, portioned
2 onions, peeled and quartered
2 carrots, roughly chopped
2 sticks celery, roughly chopped
1 leek, roughly chopped
2 sprigs of parsley
2 sprigs of thyme
2 bay leaves
5-10 whole peppercorns
2 litres water
For the chicken soup
1 cup (250ml) store bought chicken stock – I use Nomu Chicken Fond
2 carrots, finely chopped
1 stick celery, finely chopped
1 baby leek, finely chopped
1 clove of garlic, crushed
¾ cup (190ml) rissoni pasta (optional)
Salt and pepper
Handful chopped parsley
Place all of the stock ingredients into a pot and cover with 2 litres of water.
Bring to a gentle simmer and cook for about 1 ½ hours or until chicken is cooked.
Using a spoon, remove any scum that floats to the top and discard. (This prevents the stock from becoming cloudy)
Once chicken is cooked, remove from stock, shred meat and return bones back to the stock. Carry on simmering for another 2-3 hours.
Once stock has cooked for at least 3-4 hours, remove from heat and strain. Discard all bones and veg.
Return strained stock to the stove and begin to make the chicken soup.
Add 1 cup of store bought chicken stock to the homemade chicken stock and bring soup to the boil.
Add carrots, celery, leek, garlic and pasta and simmer gently for about 15 minutes or until vegetables and pasta is cooked.
Add a handful or two of shredded chicken meat and reserve the rest to make a chicken pie, or pasta etc. Allow to heat through.
Add chopped parsley and season with salt and pepper if needed.
Serve immediately with warm crusty bread.
