“Cooking For One” is where I provide a weeks menu for those who are living the bachelor life and are tired of eating convenience food or left-overs for a week. To find the menu and shopping list for this weeks “cooking for one” click here.
¼ cup (60ml) olive oil
1 red onion, finely chopped
3 cloves of garlic, roughly chopped
8 sage leaves, chopped
1 – 2 dried chillis, chopped
8-10 tomatoes (1kg), washed and roughly chopped
1 tsp (5ml) sugar
½ cup (125ml) vegetable stock
½ cup (125ml) milk
Salt and freshly ground pepper
Heat olive oil in a pot and add onion, garlic, sage and chillis. Saute for about 5 minutes on a medium heat or until onions have begun to softened.
Add chopped tomatoes, sugar, stock and milk.
Season with a good grind of salt and pepper and allow to cook, covered, for about 30 minutes or until tomatoes or soft and beginning to look like a soup consistency.
Check seasoning and adjust if needed.
Remove half of the tomato soup and pour into a container to be used for the base of the pasta sauce in tomorrows recipe. Refrigerate.
Serve the remainder of the soup with crusty bread.
