½ onion, finely chopped
1 x chicken breast, sliced into thin strips
3 – 4 rashers bacon, chopped
Splash of white wine (optional)
1 – 2 cups leftover homemade tomato and sage soup (from Mondays Cooking For One recipe)
½ round feta or 50g Parmesan, grated
Handful of fresh basil, washed and torn
Salt and freshly ground pepper
100g Linguini or any pasta you have at home, cooked until al dente (firm to the bite)
Preheat a frying pan with a little olive oil and gently sauté onion for a few minutes or until onions have softened.
Add chicken and bacon and continue to sauté until chicken is cooked and bacon is golden and crispy.
Pour yourself a glass of white wine and add a good splash to the pan and allow to sizzle and reduce until almost evapourated.
Add your leftover tomato soup and allow to simmer for a few minutes until heated through.
Remove from heat, season with salt and pepper and add basil.
Add your pre-cooked pasta as well as the grated Parmesan or crumbled feta and toss to coat.
Serve immediately with extra grated Parmesan cheese.
