A few weeks ago, a good friend of mine asked me if I could please develop some recipes that catered for just 1 person.
She said that the last thing she feels like doing after a long day at work is, firstly, having to think of what to make for supper, then having to shop for the ingredients for that one particular meal and then having to eat left overs for the next 3 days as most of the recipes she comes across serves 4!
Her ideal scenario is to receive a menu for the week, with 1 full shopping list and recipes that catered for 1 so that she would have no waste as well of the luxury of eating 5 different, easy and quick to make meals for the rest of the week.
I never realised that this was a problem, but can easily see how frustrating it can be and how convenience foods become so, well, “convenient” to just pick up of the shelf, pay, pop into the microwave and eat.
So for those of you who are living the bachelor life and would like to give this “cooking for 1″ a go, below is the menu for the week as well as the shopping list and the link to the recipe for the first night. I will be posting the rest of the recipes daily.
