Cooking For One Ingredients

A few weeks ago, a good friend of mine asked me if I could please develop some recipes that catered for just 1 person.

She said that the last thing she feels like doing after a long day at work is, firstly, having to think of what to make for supper, then having to shop for the ingredients for that one particular meal and then having to eat left overs for the next 3 days as most of the recipes she comes across serves 4!

Her ideal scenario is to receive a menu for the week, with 1 full shopping list and recipes that catered for 1 so that she would have no waste as well of the luxury of eating 5 different, easy and quick to make meals for the rest of the week.

I never realised that this was a problem, but can easily see how frustrating it can be and how convenience foods become so, well, “convenient” to just pick up of the shelf, pay, pop into the microwave and eat.

So for those of you who are living the bachelor ¬†life and would like to give this “cooking for 1” a go, below is the menu for the week as well as the shopping list and the link to the recipe for the first night. I will be posting the rest of the recipes daily.


Meat Free Monday: Chunky Tomato, Garlic and Sage Soup

Tuesday: Bacon, Tomato and Basil Linguine

Wednesday: Vietnamese Chicken Wraps with Satay Dipping Sauce

Thursday: Chicken and Cashew Nut Stir-Fry

Friday: Cajun Chicken Salad


Shopping list

Dry ingredients you may already have in pantry:

Olive oil
Sunflower oil
Salt and pepper
Pasta (preferably linguine, but any pasta of your choice will do)
Soy sauce
Peanut butter
Rice or egg noodles
Balsamic vinegar

Fresh ingredients to buy:

1 red onion
1 onion
1 head of garlic
1 punnet sage
Dried chillis / few fresh chillies / chilli flakes
1kg bag of ripe tomatoes
Vegetable stock
1 fresh mini baguette or any bread you would like to serve with your soup
1 pkt bacon
white wine (optional)
1 small tub of Feta or small block of Parmesan/Gruyere
1 punnet of basil
1 pack of 4 free range chicken breasts
1 small punnet of mange tout
1 small punnet of mung bean sprouts
1 packet of baby gem lettuce/ cos lettuce/ butter lettuce
1 bunch carrots
1 cucumber
1 packet cashew nuts/ peanuts
1 pkt wraps or pita breads
3 limes
1 punnet coriander
1 Avocado
Cajun spice/or any chicken spice you may have already to season your chicken for your chicken salad recipe
