Delicious and healthy gluten-free crumpets. A guilt-free breakfast delight.
Makes: 6 large crumpets
Prep Time: 15 minutes
Cooking time: 15 minutes
2 ripe bananas
1 tsp (5ml) vanilla extract
1 cup (250ml) ground almonds
1 tsp (5ml) baking powder
½ tsp (2.5ml) ground cinnamon
2 Tbsp (30ml) butter, for frying
Maple syrup, for serving
Raspberries, for serving
Peel the bananas and place into a glass bowl.
Using a fork, mash until relatively smooth.
Add the eggs, vanilla, ground almonds, baking powder and cinnamon and using an electric beater, whisk until smooth.
Heat a non-stick frying pan on medium heat and add a teaspoon of butter.
When melted add a ladle of batter and fry for about 30 seconds to 1 minute.
Flip, and fry the other side for a couple more seconds or until the crumpet is cooked through.
Repeat until batter is finished.
Serve warm with maple syrup and fresh raspberries.
