Its been a hectic few days of cooking for 8 teenage boys! I never knew that they could eat so much and all the time!!! I literally have to make some sort of meal/snack every two hours! Its insane, but so rewarding to hear the “oohhs” and “hmmms” and “yummms”.
Seeing that one of the boys surname is Guinness, and since I’m cooking in Ireland, I made my Chocolate Guinness cake for tea this afternoon. It went down a treat, and looks like I may need to make another one tomorrow. I just love the sweet milky bar chocolate ganache that compliments the moist bitter chocolate cake. It truly is heaven on a plate.
Makes 1 large cake or 24 cupcakes
300g brown sugar
2,5ml baking powder
7,5ml bicarbonate of soda
1 can of Guinness
250g Milky bar white chocolate
Cream butter and sugar together until light and pale in colour.
Beat in eggs one at a time until thick and fluffy and until sugar has dissolved.
Sift all dry ingredients together and fold into egg mixture alternatively with the Guinness and pour into a greased cake tin.
Bake in oven for 1 hour at 180 c. (If making cupcakes, bake for 20-30 minutes or until risen and skewer comes out clean once inserted into the cupcake).
Melt white chocolate with cream and pour over the cake once cooled.
